The Blend of Il Fontanaro
Il Fontanaro extra virgin organic olive oil is a blend of our local olives.
The oil obtained has a fruity taste with bitter and spicy notes and a colour that goes from a yellow gold to green.

Moraiolo
The Moraiolo Olive tree is small. The olive itself is round and medium sized and produces a good amount of pulp. The oil from Moraiolo olives is considered to be of excellent quality. It offers considerable and constant production and is present in many places in Umbria because it is very resistant to cold temperatures and does very well in elevated areas.
Leccino
This tree has an impressive bearing with a lot of leaves. The ovoid olives are large and long and rich in pulp, and tend to render a lot of oil of an excellent quality. Productivity is good but less constant than the Moraiolo variety. It
is highly resistance to cold temperatures.
Frantoio
The Frantoio tree is one of the medium to large olive trees. The ovoid elongated olives are quite big and rich in pulp, and offer
good quality and high quantity oil content. Productivity is constant and the tree has a medium resistance to cold temperatures.
Dolce Agogia
This variety has less leaves than some of the others mentioned here. The olive is quite big, with an ovoid shape and a discreet olive oil content of good quality. Productivity is good and relatively constant. Has a high resistance to cold temperatures.
Pendolino
The Pendolino tree has a typical pendulum shape and is not very large. The olives themselves are quite big, with an elliptical shape that looks like a sickle.
Its productivity is constant and it offers excellent resistance to cold temperatures. It is primarily used as a pollinator.
