A study published in “Food Chemistry” -a Netherlands-based journal- discovered that frying in virgin olive oil food like french fries enhance their nutritional properties.
Virgin olive oil is obtained from the fruit of the olive tree without any chemical alteration or heat treatment. The research discovered that several compounds of the food resist the heat (190°) and enrich the fries with bioactive compounds from the virgin olive oil.
Among the most relevant compounds transferred during the process there are plant sterols and tocopherols which are very important elements that lower cholesterol and present vitamin E activity.
According to the researchers, virgin olive oil is a nutritionally rich oil, it is a source of oleic acid and bioactive compounds that are not present in refined edible vegetable oils commonly used for frying.
